Saturday, 12-04-25

Hi, everyone!  Welcome to my blog where I talk about my ongoing Slimming World and associated health journeys.  I have managed to reduce my 'bad' cholesterol by eating according to Mediterranean principles and now I want to maintain this.

What I have eaten today.

Tomatoes and mushrooms wrapped in an omelette.  It was lovely.
One syn for some mixed seeds.

Lunch and dinner were basically the same thing.  I made a big bowl of Greek salad - bulgur wheat, feta, edamame beans, mixed seeds, capers, roasted red pepper, sundried tomatoes, olives, cucumber, tomatoes, grapes, the last bits of the nuts I scoffed yesterday, Greek dressing and leaves.

For the whole lot, it was one A for the feta, three syns for the dressing, one and a half syns for olives, ditto for sundried tomatoes (oil rinsed off), the seeds and nuts were a healthy extra B and I think that was that.

Later on I had some fruit.

Dinner was the rest of the salad with some shreds of smoked salmon and some croutons.

The above plus one healthy extra B

It was all so, so delicious!

Summary:
one healthy extra A
two healthy extra Bs
six syns - I think.


Tomorrow's meal plans:

B:  sourdough waffles, fruit and yogurt

L:  cheese and apple toastie, salad; fruit

D:  roast chicken breast fillet, roasted Med veg; fruit

    1. Me too, Sooze. There are so many variations and it is always deliciously filling. I'm looking forward to when I can pick the tomatoes from the garden - they always taste so much better. xx
