Sunday, 13-04-25

Hi, everyone!  Welcome to my blog where I talk about my ongoing Slimming World and associated health journeys.  I'm now in my target range and I have managed to reduce my 'bad' cholesterol by eating according to Mediterranean principles and the Slimming World structure and now I want to maintain this.


What I have eaten today.

All a bit brown, isn't it, but healthy, all the same.  Wholegrain sourdough discard waffles with spices mixed in, tomatoes and mushrooms on top and a bit of Crucials brown sauce.
Half a healthy extra B and half a syn.

For lunch, I made up a toastie with apple and pear chutney, some cheddar and some thinly sliced apple.  The bread was wholemeal sourdough - sourdough does taste gorgeous when toasted!
With it I made a salad from watercress, lettuce, tomato, cucumber, pepper, mixed seeds and sliced apple with my usual Greek dressing.

One and a half healthy extra Bs, one and a half healthy extra As, three syns for dressing, one for seeds and one and a half for chutney.

Later on, I had another apple - apples are my favourite fruit, I think.

I had salad left from lunch which needed using as it had dressing on it so I changed my plans, roasted a half chicken fillet in lemon juice and maple syrup, shredded it and topped the salad with it plus some olives to jazz it up and some bulgur wheat topped with some chopped fresh mint for the wholegrain part.
No afters - I was full.
I've already counted the salad.  One and a half syns for the olives and one syn (under, really) for the maple syrup.

Summary:
one and a half healthy extra As
one and a half healthy extra Bs
eight and a half syns

Tomorrow's meal plans:

B:  discard crumpet, egg, tomatoes and mushrooms

L:  tomato and lentil or roasted red pepper soup with some croutons; fruit

D:  stir fry with noodles; fruit
I found a pack of fresh stir fry that was a bit different - broccoli, beansprouts, green and red cabbage, onion and edamame beans, to which I can add things like peppers and mushrooms and seeds.  I have, I think, various sauces tucked away somewhere (or I can make one) and I have noodles so I will give that a go.
