some onion, carrot and celery - just a bit because there's not heaps of peas - finely chopped
leftover peas - I had about 80g
half a chicken stock cube (I'm out of veg stock cubes)
bit of water
some dried parsley
splash of milk
seasonings as needed
Saute the onion, carrots and celery in a little spray oil.
Add the peas, the stock and a bit of water.
Simmer until veggies are all soft.
Taste and adjust seasonings as needed
It was really tasty and would be even nicer with a little fresh mint, chopped and sprinkled over.
