Monday, 14-04-25

Hi, everyone!  Welcome to my blog where I talk about my ongoing Slimming World and associated health journeys.  I'm now in my target range and I have managed to reduce my 'bad' cholesterol by eating according to Mediterranean principles and the Slimming World structure and now I want to maintain this.

What I have eaten today.

Very delicious egg on a discard crumpet with tomatoes and mushrooms on the side.
One healthy extra B
In the soup there are some pickled onions, carrot, a can of Mutti chopped tomatoes, one roasted red pepper, one and a half tbsps red lentils, a couple of sundried tomatoes, stock and seasonings.
Afters was an apple.
One healthy extra B and I am going to say one syn for the sundried tomatoes (it made two good portions).

For dinner, I did a stir fry using fresh veg, some mixed seeds and a packet chow mein sauce with some rice.  The protein was edamame beans and the seeds.
It was absolutely gorgeous and I am so glad I have half the stir fry veg pack left for a different dinner.
Afters was some grapes.
three and a half syns for the sauce, one for the seeds and one for the rice plus three for half a tbsp evoo.

Tomorrow's meal plans:

B:  fruit platter (I have very little time between Groove and catching the bus into town for an audiology appt)

L:  the other portion of soup with bread to dunk; fruit

D:  chicken stir fry; fruit
I was planning to have the last of my hm lasagnes from the freezer but I have some of the veg pack left so I will use it with chicken and put together my own sauce, probably with soy sauce, oyster sauce, sweet chilli sauce and some garlic and ginger - or something like that anyway.  Probably no rice although it was nice this evening.

Exercise:   Groove and the walk there and back, weather permitting.
