Tuesday, 15-04-25

Hi, everyone!  Welcome to my blog where I talk about my ongoing Slimming World and associated health journeys.  I'm now in my target range and I have managed to reduce my 'bad' cholesterol by eating according to Mediterranean principles and the Slimming World structure and now I want to maintain this.


What I have eaten today.
I've now got into the habit of having an apple before any fitness class, so much so that I don't usually even mention it.  I find it gives me energy without guilt and, anyway, apples are a favourite fruit.  

It was a full morning today so I just grabbed a quick selection of fruit for breakfast.  No photo

Lunch was the other half of the tomato, lentil and roasted red pepper soup I made yesterday.    It was very simple, no spices or anything, quite uncomplicated and really tasty.  I spray toasted some sourdough to dunk and had some mixed seeds sprinkled over.
The soup was syn free,  a half healthy extra Bs for the bread and part of a B for the seeds.

Later on, I had some grapes.

Dinner was another stir fry, this time with chicken.  I made the sauce using soy and oyster sauces, sweet chilli sauce, garlic and ginger.
I ummed and ahed about some noodles but decided not to because there was already plenty in the form of lovely vegetables.  I am definitely getting those stir fry veg again.
One and a half healthy extra As for the chilli sauce and six syns for one tbsp olive oil.

Summary:
no healthy extra As
two healthy extra Bs
seven and a half syns

This, by the way, is the stir fry vegetables - they're lovely.  I added other stiff for colour and just because vegetables are so, so good.

Tomorrow's meal plans:

B:  marmite mushrooms on toast, leaves on the side

L:  a salad of some kind; fruit

D:  a ready meal from the freezer, probably one of the protein ones I bought from Iceland the other week.  I want to see what they are like and they're taking up freezer space.

  1. Have you ever roasted peppers in the air fryer? I skin them after they cool and wow, so good in soups and all kinds of things.

    1. Yes, sometimes. I love roasting sweet potato, peppers, mushrooms, onions and, at the end, tomatoes in Nellie and it is so very delicious. Roasted adds an amazing flavour, doesn't it?
      Roasted veg is great in a salad too, as a heat contrast as well as for the flavours. So good!
      For soups, I tend to use one from a jar - for convenience.

    2. If you ever get to air fry them, put them in a heatproof glass until they cool, remove skins, add apple cider vinegar and real maple syrup .... since I started doing that I can't go back to jars. That said, there are some things that I get jarred too. So I get that for sure.
