Tuesday, 12-11-24 and simple chicken casserole recipe

Morning, everyone!
I'm feeling loads better now after a couple of days back on the healthy food again, thank goodness.

What I ate today:

I had an apple before Groove and this pineapple and plums bowl afterwards.
Syn free.
A simple lunch - grated croot mixed with hm hummus (from the freezer). toasted Med bread and some salad veg, followed by an easy peeler.

One healthy extra B and two syns for the bread plus four syns for the hummus.

I'll post how I made the casserole below - it was very tasty and very simple.  There was a good amount of sauce left over so now I have to think how to use it tomorrow.
I used some edamame beans from the freezer rather than opening a whole can of mixed beans.
The roasted veg was leftovers from yesterday.

One syns for evoo in the roasted veg, two syns for evoo in the casserole, one syn for thickening granules and half an A for soft cheese (not officially counted as an A nowadays but . . .)

Summary:
half a healthy extra A
one healthy extra B
ten syns
Tomorrow's plans.

B:  fruit, yogurt and seeds

L:  soup (from freezer) and focaccia; fruit

D:  bubble and squeak patty with the creamy sauce from dinner today, veg, bulgur wheat; fruit

Simple chicken casserole



Ingredients:
some evoo (syn what you use)
one small onion or shallot, chopped
half a good sized chicken breast fillet, cut into chunks.  
three mushrooms, quartered
a handful of edamame beans (mine were frozen)
good chicken stock plus some stock powder if wanted
garlic granules
thickening granules (I found two level tsps was fine for two portions)
some low fast soft cheese to melt in (which I called a healthy A although it isn't really nowadays)


Method.
Heat the evoo and soften the onion.
Add the chicken and fry until almost cooked through,
Add the mushrooms and the edamame beans and mix well.
Add some garlic granules (to taste)
Add the chicken stock plus extra stock powder if needed (taste and see).
Bring to a boil and simmer gently until the chicken and beans are cooked.
Add the thickening granules and stir well.
Add the soft cheese and stir until all melted.
Check seasoning - I didn't use any extra seasoning.

Serve with veg of choice.

I had half the sauce left for another meal.

  1. I love leftovers. It's kind of free food in financial terms. My first thought is always 'what needs using up?' and the second is 'how do I improvise?' This ensures minimum wastage (my pet hate). I have a rough idea of what we will eat during the week but not a set plan.

    1. I kind of have a set plan but it changes so I suppose it's not that set really. Having some idea of what's happening helps so much with the shopping list.
      Freezer/fridge rubble meals have been some of the nicest I have ever had and, as you say, significantly reduces waste. And I really can't afford waste. xx
