Friday, 02-05-25

Hi, everyone!  Welcome to my blog where I talk about my ongoing Slimming World and associated health journeys.  I'm now in my target range and want to keep this steady while following Mediterranean diet principles and the Slimming World structure.

I decided not to weigh today - not because I've gained (I haven't) but because now I am on the Maintain Train, as the lovely Stephanie says, I need to create my own route and weighing every week is too similar to the previous leg of the journey.
I explained this to Heidi and she understood exactly what I was trying to say so I hope it makes sense here too.

I used to call Fridays 'Eat Your Syns Friday' but that's an awful mouthful so I'm copying Stephanie and calling it Chillax Day.  In other words, still eating sensibly, thoughtfully and healthily but not counting syns strictly, just being very mindful of them and making sure most syns are what SW calls 'savvy syns'.
What I have eaten today.

I used my usual recipe for pancakes but instead of yogurt, I used some buttermilk I had in the freezer from when I made butter with the left over Christmas cream.  No idea of buttermilk syns (I could look them up, I suppose), nor of how much I used because I eyeballed it.

They were really tasty.  Not soft and fluffy, more like English pancakes.
It was nice to have salad like this instead of choppy and tossed together.  I put some leaves in the bowl and covered them with mixed beans, cucumber, carrot, coleslaw (cabbage, carrot and apple), baby corn, red pepper, mixed seeds and, in the middle, quinoa topped with some of the  Romesco sauce I made yesterday (so, so, so delicious).  I know the sauce was around four and a half syns, the seeds were one and a half and the coleslaw was half a syn.

A very simple dinner.  I made the chicken marinade with soy sauce, oyster sauce, Henderson's Relish, lime juice, tomato puree and honey.  One syn for the honey.

I have snacked on nuts and some home made olive and rosemary sourdough (delicious) too.

No summary as it is a chillax day.
Tomorrow's meal plans:

B:  egg on crumpet, tomatoes and mushrooms

L:  soup from the freezer, focaccia to dunk; fruit
Edit:  change of plan.  I have quinoa and beans to use up plus the Romesco sauce so I guess another salad looms!  The soup will keep fine in the freezer

D:  mixed bean penne arrabbiata, maybe side salad;

Exercise:   gardening and a walk
