Sunday, 11-05-25 (written Sunday, posted Monday)

Hi, everyone!  Welcome to my blog where I talk about my ongoing Slimming World and associated health journeys.  I'm now in my target range and want to keep this steady while following Mediterranean diet principles and the Slimming World structure.

After discovering I had a cupboard full of canned pulses, lentils and the like, I have been searching for recipes to try out.  Saturday's lentil bake was a very successful starting point and I have a few more planned for this week.
Mind you - I will then have things to use up - such a shame, eh?  Quesadillas, falafels, burgers, . . . and so on?
What I have eaten today.

I think I rather overbaked the bagel but it was nice, all the same.  I've made a note in my book for next time.  

One healthy extra B and three syns for the avocado.

By the way, if you do sourdough, this recipe works really well with both activated started and with starter discard and a pinch of yeast (I think that's called poolish).

Spanish omelette (made in two little dishes - I really want a round dish that is just a bit larger but don't have one) with salad.

One healthy extra A for cheese, two syns for evoo and half a syn for dressing - the 'diet' dressing has nearly gone and I won't be buying any more.  I think I have a honey and mustard one in the same range so must use that one up too.  

The evening was a disaster zone.  I dived, mouth first, into a fresh made loaf - not bad in itself, it was a very healthy loaf, but not the amount I managed to work through.
Oh, well, line drawn, moving on.  We all do it from time to time.  And the bread was awfully good!!

No summary, obviously!    😔

Tomorrow's meal plans:

B:  fruit

L:  lentil bake, salads; fruit
Beth is round so I've made the lentil bake again because I think she will really love it.

D:  tomato, vegetable and black bean stew; fruit

Exercise:   circuits class - hopefully outside
