After discovering I had a cupboard full of canned pulses, lentils and the like, I have been searching for recipes to try out. Saturday's lentil bake was a very successful starting point and I have a few more planned for this week.
Mind you - I will then have things to use up - such a shame, eh? Quesadillas, falafels, burgers, . . . and so on?
What I have eaten today.
One healthy extra B and three syns for the avocado.
Spanish omelette (made in two little dishes - I really want a round dish that is just a bit larger but don't have one) with salad.
By the way, if you do sourdough, this recipe works really well with both activated started and with starter discard and a pinch of yeast (I think that's called poolish).
One healthy extra A for cheese, two syns for evoo and half a syn for dressing - the 'diet' dressing has nearly gone and I won't be buying any more. I think I have a honey and mustard one in the same range so must use that one up too.
The evening was a disaster zone. I dived, mouth first, into a fresh made loaf - not bad in itself, it was a very healthy loaf, but not the amount I managed to work through.
