Saturday, 03-05-25

Hi, everyone!  Welcome to my blog where I talk about my ongoing Slimming World and associated health journeys.  I'm now in my target range and want to keep this steady while following Mediterranean diet principles and the Slimming World structure.

After yesterday's chillax day, I'm straight back on it today.  I need a bit of a buffer before I have a weekend at Potters Five Lakes in a few weeks' time.  Getting ahead rather than playing catch up feels good to me.

What I have eaten today.

Loving my home made crumpets - they're so much nicer than the shop bought ones and a great way to use sourdough discard.

One healthy extra B for the crumpet and two syns for a tsp evoo.

I mixed some quinoa with some mixed beans and some of the Romesco sauce, made a base salad with leaves, onion, cucumber, baby corn, seeds, capers and cornichons plus a bit of low fat dressing (UPF alert) and topped it with the quinoa mix, feta, coleslaw, carrot, yellow pepper and tomatoes.  Very filling and very tasty!

One healthy extra A.
Four syns for the Romesco sauce, half a syn for salad cream, one and a half syns for mixed seeds, half a syn for low fat dressing and I think that's it.  So six and a half syns altogether.

Later on, I had an apple.
A rather messy penne arrabbiata for dinner but it tasted great.  I made two portions so I have some for Monday's lunch.  
One and a half syns for olives, one syn for some sundried tomato and one syn for evoo.

Afters was an orange.

Tomorrow's meal plans:

B:  tomato and mushroom omelette

L:  cheese and onion toastie, salad; fruit

D:  roast lamb dinner - probably with roasted parsnips, broccoli and carrots
