Saturday, 10-05-25

Hi, everyone!  Welcome to my blog where I talk about my ongoing Slimming World and associated health journeys.  I'm now in my target range and want to keep this steady while following Mediterranean diet principles and the Slimming World structure.


What I have eaten today.

Delicious buckwheat pancakes with yogurt and fruit.  Absolutely gorgeous and perfect for a warm and sunny May morning.

Half a healthy extra B

Edit:  later on, I remembered I had some maple syrup for two syns

I had a mini-apple later on.
As I had the oven on this morning for some bread, I made the cheesy lentil bake at the same time.
I was the best thing I have tasted in a long while!
I made two portions (halved the recipe) and it was so, so good, I had half cool for lunch with salad and half warmed up for dinner.

Here's the recipe - do give it a go; I loved it so much and it was dead easy.
I used what I had, so onion instead of leek and the remains of a bag of peas instead of courgette.  You can use whatever veg you fancy using really.

One healthy extra A and two syns for oil (I used 10mls evoo) plus half a syn for salad cream, one syn for some olives and one syn for some onion chutney.

Later on, I had an orange and, as I had baked a sourdough loaf, I tasted the crust when I sliced it for the freezer - a half healthy extra B.


So dinner was the rest of the cheesy lentil bake and I decided to air fry some veg to go with it.  
Afters was some fruit.
One healthy extra A and two syns for the bake and one syn for some brown sauce.  I used spray oil for the veg.

Tomorrow's meal plans:

B:  avo and egg on toasted sourdough something - bread, crumpet or bagel, tomatoes and leaves

L:  frittata, salad; fruit

D:  roast lamb dinner
Still using up portions of lamb from several Sundays ago - and very nice too

Exercise:   rest day
