Recipe: pancake cannelloni

Really simple, providing you have the required ingredients.

Ingredients;
a portion of savoury mince/bolognaise type thing
two small pancakes
(mince and pancakes made a while a go and frozen in single portions)
30g finely grated cheddar

Method:
Preheat the oven to 180C fan.
Brush a small, rectangular, ovenproof dish with oil
Spread half the mince mixture over each pancake and roll them up.  Lift them carefully into the dish, tucking down the ends.
Sprinkle the cheese evenly over the top.
Bake until the mince is bubbling and the cheese has browned.
Serve hot.

Very delicious.

  1. Sounds and looks delicious. Good idea to use pancakes, so much easier than stuffing cannelloni!

    1. Ever so much easier. I gave up on cannelloni ages ago - I now use lasagne that I soak in hot water until it goes pliable - much easier to deal with.
      I think it's nicer with pancakes though.

  2. We had those in the 80's at school. ! must admit I hated them - in my late teens I found out I'm allergic to onions and there's surely plenty of onions in school lunches! most of my classmates loved them.
    I might try them again, my bolognese-thing doesn't have any onions...

    1. That was most unfortunate - I think they do (or did) use plenty of onion in their dinners. What a shame you didn't like them but we all have individual tastes. :-)
