Monday, 10-10-22

 Morning, everyone.
Is anyone else finding that the soup season has definitely started?  

During the summer, salads and cold cuts, etc, were the thing and the thought of soup hardly came to mind but as the nights lengthen and the days shorten, the sunlight becomes more filtered and the mornings and evening considerably chillier, thoughts turn to warm, savoury, nutritious and economical soup, beautiful soup . . .

I got a chicken portion out of the freeze yesterday and it's been gently simmering in the slow cooker overnight.  I've now taken all the meat off the bones and the stock and bones are continuing to simmer preparatory to making a good old chicken noodle soup for tomorrow.  Mmmmmmm.

Yesterday's meals:

Breakfast was gorgeous.  I called it toffee apple pancakes.  I used 20g wholemeal flour (which I count as half a B), a small egg and some milk plus some sugarly and some apple spice pie mix (home made).
I mixed a bit of caramel skinny syrup into 2% Greek yogurt - that's in the little bowl.
The apples were cooked in a bit of spray oil and a bit of apple pie spice mix and then I added one level tbsp of demerara sugar (three syns) and stirred it round till the sugar went toffee-ish.
Was it worth the three syns? - it most certainly was, I enjoyed it so much.  It was Autumnal and warming.
There's very little to beat a roast dinner and there was more meat on that joint than I thought.  I certainly had a good old portion for lunch!

In the morning, I used the Ninja on dehydrate to process some slices of apple and I had them for dessert - two small apples-worth.  Very nice - I will do that again and maybe leave them in a bit longer so they go more crispy.  As it is a measured amount and two small dessert apples come well within the normal portions range, I'm not even slightly contemplating synning it.


And here's dinner - some Spanish rice from the freezer with added lamb and some grated cheese.  I had some leftover salad but it had gone a bit over so I searched for ripe tomatoes from the bowl and enjoyed them instead.

I was too full for dessert.


Today's meal plans

B: sweet omelette with fruit and yogurt
Just what it says.  The fruit might be from the freezer as the fresh strawberries, etc, are not that great at the moment and I might add some apple pie spice mix to the omelette itself.
SW:  half a syn for 2% yogurt or a Mullerlight

L:  tomato and red pepper soup, croutons; fruit
The soup is from the freezer and the croutons are home made in the Ninja - so easy, just cut up your bread, spray with oil (zero calorie oil in my case), sprinkle with seasonings of choice and air fry for a short time until crunchy.
You can tell summer is properly over once the soup season starts!

D:  leftover lamb ragu, maybe a salad; yogurt
This is just a simple tomato and veg sauce and leftovers of roast lamb with pasta of some kind.  Easy to make and tasty to eat and so SW happy.
All I will do is soften some onion, pepper and mushroom in spray oil, add some baby corn and anything else I fancy in the veg line, add seasonings, herbs and some garlic, stir in some nice chopped tomatoes and allow it all to simmer for a while until thick.  Then add some of the lamb and some cooked pasta with a bit of the pasta water, if needed, taste and adjust seasonings and serve with grated cheese over.

  1. Yes, definitely soup weather.....we're having pea and mint soup for lunch today. It's a bought one though, Sainsbugs were selling them off cheap at 28p a can the other week, so I bought a dozen!
