Well, I dodged the bullet again - this week it was a maintain which I am more than happy with. Onward and downward now.
I was looking back over the last couple of weeks to see which fish meals I have had.
- fish pie x 2 (including today)
- fish and chips x 2 - one using a piece of ready battered cod and the other with my own egg and breadcrumbed cod
- salmon with honey, ginger and lemon juice
- West Coast salmon (a Tastily meal)
- smoked haddock and leek risotto
- salmon traybake with mixed veg
- tuna melts
- tuna salad roll
- salmon carbonara
- tuna steak with salsa and roasted butternut squash
- kedgeree
Not bad. Nothing particularly avant garde but I've extended my range of fishy dishes which is good.
I've worked through most of the excess fish in the freezer so I think today is the end of fish weeks for now but I really must make an effort to include more fish in the weekly plans.
The freezer ready meal thing continues for a while to come! It's proving very useful for quick and east lunches.
Today or tomorrow, I am going to sort through my beef and lamb bag in the freezer, make a list and then search for recipes and start using some up, like I did with the fish. And then I need to tackle the chicken/poultry bag and after that the pork and vegetarian bag. An audit is long overdue!
That should keep me going and also save some cash just before Christmas. Useful.
Yesterday's meals:
A delicious breakfast - must splash out on Happy Pig bacon more often (this pack was on yellow sticker).Lunch was an M&S mini meal, lamb hotpot, enhanced with good old broccoli and sprouts and it really was very nice indeed. Once I have got the freezer contents down to a reasonable level, I will get this again. A bit of grated cheese added on top before reheating in the oven would be really tasty too.
Goodness, what a beige dinner! I didn't fancy any peas.
The fish, egg and breadcrumbed myself, was delicious and actifry chips are always really nice.
Today's plans:
B: choccy weetabix with milk, yogurt and fruit
Just because I love it and it's delicious and . . . yeah!
Even better, I will use some allotment raspberries (from the freezer)
SW: 125mls semi skimmed milk is half a healthy extra A, two weetabixes is a healthy extra B and the rest is free or speed.
L: lentil and bacon soup, fruit
I think I will use two pots of this soup (from the freezer) as one on its own might not be filling enough (excuses, excuses - the fact that it's flippin' delicious has nothing to do with it, obviously!).
SW: all speed/protein/free
I know I have already had fish pie in this challenge but I have bits and pieces to use and fish pie is just the ticket.
I will use small pieces of cod and smoked haddock, use cheese triangles in the sauce and should have enough healthy extras to add a bit of cheese to the mash on top - bliss!

Where did you buy the Happy Pig bacon please? Is it the same as the Spoilt Pig brand?

Ah thanks, I've had the Spoilt Pig bacon. That's what I buy now, just not as often because it is a bit pricey but worth it for a treat every now and then.
DeleteThat's a lot of lovely fish meal ideas! I'm badly needing to do a freezer audit as I've been putting a lot of produce in but not sorted/rotated what was already there. I do know that there are zero meat or fish products as I seem to have become vegetarian this year!
