Thursday, 02-07-20

Good morning.
Thanks for the lovely and constructive comments after yesterday's ponders.  Much appreciated.

Yesterday's photos:
Instead of vanilla to flavour the pancakes, I used lemon essence and some lemon zest and it works really well.
I might try orange essence and zest and some orange segments next time.
Lunch.  In the quesadillas were mashed, rinsed baked beans with garlic granules and Cajun spice mixed it, a simple salsa of onion, red pepper and mango and 30g finely grated Gruyere.


I enjoyed the pork mince and veg chilli very much.  It was quite spicy but the yogurt cooled it all down perfectly.

Today's plans:
B:  oat bran waffles (not sweet), bacon, egg and tomatoes
I'll cut the vanilla and sugar and instead add some mustard powder, Cajun spice, garlic granules and very finely chopped onion, red pepper and mushroom - just a tiny amount of each.
We will see . . .

I have half a carton of chopped tomatoes left over from Tuesday's dinner so I thought I would make a tomato and veg soup.  I made it yesterday and added a bit of orzo because, as it cooks, it thickens the liquid nicely, as well as a few beans, mixed veg and corn

tomatoes = 56 cals
15g orzo = 53 cals
20g edamame beans = 27 cals
30g mixed veg =  17 cals
15g sweetcorn = 11 cals
heaped tbsp tomato puree = 17 cals
mini wholemeal roll = 80 cals
apple = 50 cals
total = 311 cals
SW:  half a heB and one syn for the bread

D:  fish, chips and peas; yogurt
I will take great delight in having fish and chips after the Zoom meeting at five.  Proper, batter coated fish, SW chips and the usual 100g peas plus, to spoil myself, a goodly dollop of mayo.

45g superlight mayo - 45cals
