Monday, 08-11-21

 Good morning!

Yesterday's meals:

Annoyingly, the egg broke in the pan but it was still a very satisfying breakfast.  You can just see the potato waffle under the egg.
This was a real, proper roast dinner, despite the lack of roasties.  Parsnip and sweet potato was roasted in the actifry, half way through I added a couple of little onions I found at the back of the fridge and the stuffing balls and with five minutes to go the Yorkshires also went in.  The sprouts were fresh boiled and the other green veg was from last night.
Maybe nicest of all is that when I made one wee portion of cranberry sauce (one and a half syns), I added just a pinch of my apple pie spice mix and it was absolutely amazing!
There was no room left for any fruit!
This was the pot pie using the other half of the chicken thingy from yesterday with some potato and sweet potato cheesy mash - about two thirds potato to one third sweet potato, an egg yolk and 45g grated cheddar.  The other 15g (to make two healthy As altogether) was sprinkled over the top.  I know it looks an absolute mess but it was delicious

Half of it is on the plate and the other half will be perfect for lunch tomorrow.

A yogurt finished the day off nicely.

Today's plans:

B:  bacon and egg muffin, tomatoes and mushrooms
SW:  one healthy extra B for the wholemeal muffin and one syn for bbq sauce

L:  the remains of the chicken and veg pot pie, left over from yesterday, assorted veg; fruit
I will definitely make this again; thank you to Tracy Mouse for the idea.
SW:  one healthy extra A for the cheese in the mash.  The underneath is about a quarter of a syn but I paid that yesterday.

D:  lasagne, salad; yogurt
I'm using the recipe from the SW magazine for the cheese sauce which, I remember, was rather nice, but the underneath will be cooked pork mince from the freezer rather than roasted med veg.  It should make two portions so that's tomorrow's lunch sorted out too.
The actual recipe doesn't involve real cheese but, for me, a lasagne has to involve cheese
SW:  the sauce will be one healthy extra A (per portion) plus an estimated three syns for milk and cornflour, etc.  Also half a syn for the yogurt

E:  circuit training today.

Summary:

one healthy extra B
four and a half syns


From the freezer:
muffin
pots of mince
plus, as I'm using up the pie, that won't go into the freezer and it usually would
