Recipe: Easter pancakes (aka hot cross bun pancakes)

I'll just give the recipe for the pancakes. What you have with them is up to you - syn as needed.  They were so, so good.




Ingredients for one portion (about four, depending on size)

20g wholemeal SR flour (or use 20g oats, blended if you don't like my reasoning below) - half a B
one medium egg
1/4 tsp baking powder
a dollop or so of 0% yogurt
cinnamon, mixed spice and nutmeg to taste - don't skimp
15g sultanas or dried fruit of choice - sultanas are two syns (I thought they would count as part of a B but they don't)
10g chopped peel - one and a half syns
water as needed
spray oil for frying

Method

Put a non stick pan on the hob and heat to medium hot.
Meanwhile, add all the ingredients in a bowl and mix well.  Add water to get the consistency you want.

When the pan is hot, spray with frylight or equivalent and add batter.  Cook on onme side, turn and cook on the other.  Keep one pancake warm while you do the next.

Serve with accompaniments of own choice.
I had some mixed berries and one tbsp marmalade for an extra citrus vibe.  Next time, I might very well add grated orange or lemon zest to the batter too.

**  Dove wholemeal SR flour is slightly lower than the equivalent weight in oats and has slightly more fibre.  As healthy extra Bs are all about fibre,  I have no problems with counting wholemeal flour as a B choicer, used carefully and sensibly.

That's what I do but you need to make up your own mind about it.
