Tuesday, 11-04-23

 Morning, everyone.

Has anyone been watching Jamie's One Pound Wonders on TV?  I've been catching up and there's some really good recipes there that will work with Slimming World, providing I curb his enthusiasm for adding olive oil to everything.

I know Jamie Oliver is not everyone's cuppa but there's no doubting his wish to help out in so many different ways through the years and he has made all these one pound wonder meals available as a free downloadable PDF instead of bring out a book.

Personally, I like him.  His recipes generally seem doable and quite unfussy, he's all about the flavour, He's very hands on, literally as well as figuratively,  he's a family man and - well, he's an Essex lad.  What's not to like (no need to answer!)?

I may (will) be using some of these recipes in the weeks to come.  I already have the gnocchi recipe in he planning for next week - this week is already planned.


Yesterday's photos:

A very filling breakfast.
I have a couple of six inch, fit-in-Nellie cake tins and I used one of them.
I sliced two small new potatoes and spread them over the sprayed base of the tin.  Then I laid over one lighter cheese slice because it needed using.
Then I laid over two sliced and softened mushrooms.
Finally I whisked up two medium eggs*, 30g grated cheddar, salt, pepper, garlic granules and mustard powder and poured it over.
It went into Nellie on the bake function using the default that came up automatically - I think it was 160C for 15 mins.  That cooked it perfectly.  If I had used more egg to make it a deeper thing (it was about half an inch thick/deep), it would have taken a bit longer.
Very easy, very tasty.  The cheese slice didn't add anything to the flavour (those lighter ones are pretty tasteless, aren't they?) but it added a creamy element to the finished thing.  I'll do that again.  That means I went into my second A, but that's OK.



My roast dinner photos always look rather haphazard and messy.  Never mind, it tasted great and that's what matters.

Later on, I had three small easy peelers.

Dinner, made with leftovers and a peshwari style sauce from the freezer, was also delicious.  
I finished off with a yogurt.


Today's plans:

B:  poached egg on toast (one of each); fruit
A lighter breakfast because the rest of the day is a bit heavier, especially dinner.
SW:  half a healthy extra B for one slice of toast

L:  teriyaki chicken skewer, coleslaw, salad; fruit
These skewers (from Iceland) are really quite nice.  At some point, I will try one in a pitta or wrap.
SW:  one and a half syns for the chicken and one syn for some salad cream

D:  sausage, cheesy mash and beans
Proper comfort food, this.  The sausages are the Kelly turkey ones I got with the Christmas turkey and not only are they pretty low fat, they are also very tasty, worth the syns.  I shall splash out and have two!
I have some little pots of onion gravy in the freezer which is useful.
At the time of planning I fancy some beans but this might change to some roasted Med veg
SW:  at least one, maybe two, healthy extra As in the cheesy mash, eight syns for the sausages (an estimate because they're a local thing so not on the SW site), half a syn for some crucial brown sauce and half a syn for yogurt

Ex:  Groove at the Shimmy Studio - it's the second of the Easter block - followed by, weather and inclination permitting, a walk around town.

Summary:
up to two healthy extra As
half a healthy extra B
eleven and a half syns (a bit high for me - I blame the sausages!)

  1. Yes, I've been watching him Joy, and in fact I've already made several of his recipes from this series. You're right, he's not to everyone's taste (husband doesn't like him, and even I find him very irritating at times), but he's a genuine guy who does what he can to help. His laddish expressions and enthusiasm are much more palatable than Gordon Ramsay's foul-mouthed, shouty 'Look at me, I'm the boss!' show-off persona - well, in my opinion anyway. And Jamie uses normal ingredients that most people have at home, and doesn't over-complicate the recipes. xx

    1. Oh, I totally agree. I cannot stand Ramsey and never, ever watch anything with him on. I think he is horrible, I really do. You couldn't get anyone as totally opposite as Jamie and Ramsey, could you?
      I like the way Jamie encourages one to swap in ingredients, if necessary or wanted. I appreciate flexibility in cooking.

    2. I've done the Scruffy Veg Lasagne, Veggie Puff Roll, Mushroom Risotto, Veggie Toad, Cauli Cheese Spaghetti and the Mint Aero no churn icecream. I didn't think much of the lasagne, it was just too messy and not really lasagne-like. The mushroom risotto and cauli cheese spaghetti were gorgeous, inspired use of frozen cauli for the sauce. The veggie toad with really easy and tasty stuffing balls was right up my street. The ice cream I made at the weekend and it's delicious and so quick and easy. xx

    3. Thanks, Sooze. I want to make that ice cream in a few weeks' time when I have everyone round mine for afternoon tea, I hope. I have the gnocchi planned for next week too. xx
