Good morning.
I can't believe how much I am enjoying my food at the moment. Maybe it is because it's sunny and very cheering generally so my mood is good all round.
I've found that if there's something that excites me in a meal, I am much more likely to stick to the planning. If it seems mundane, that's when things slip a bit.
I must just keep going with the recipes, the flavours and the colours.
Also, calorie counting , while being extremely helpful in supporting my SW based meal plans, is quite a nuisance when it comes to things like a mixed salad. I keep forgetting that I need to weigh each item and, given that they usually come to very few calories, it's not a problem but I feel I ought. I'm going to continue to double check though; it's giving me back the confidence that was rather battered through Dad's illness and the comfort eating/ subsequent gain.
Yesterday's meals:
The mini tortillas heated up a treat and this was a very satisfying breakfast for 287 caloriesI love Aldi's sushi and this was most satisfying after a bout of personal training with Lindsey.
I'm having fruit a lot but it is so very nice at the moment and it's definitely the weather for it. M&S had pineapples on special (you really can't turn down a pineapple at 49p, can you?) and I reckon it's about ready to enjoy. I'll probably have satsumas and an apple to go with it.
SW: speed and free
I fell for this chicken while in Aldi the other day. I could use it in a wrap - I will think about that.
The traybake recipe is in this month's SW magazine (page 28). I will use butternut squash instead of the potato the recipe calls for because I have just bit to use up and this is an ideal opportunity.
It doesn't say this but I will add some grated cheddar as a sort of garnish.

Did you see that Slimming Eats as written a recipe book? I'm not sure when it is due to be published.
